Octopus, grilled and sautéed with garlic mousse and peppers, reduced in white wine with a poultry base and a touch of white sauce.
- The Navigators Paila
Pen onion with oregano, black pepper and tomatoes in white wine brunoise dashed with pieces of eel, salmon, oysters, clams, squid and shrimp, pan mounted on clay and scented with fresh cilantro.
- The Navigators Salmon
Grilled salmon fillet accompanied by a mixed shellfish sauce(clams, squid, scallops, shrimp tails and white sauce).
- Conger stuffed with oysters
Conger eel fillet stuffed with coral scallops, flavored with dill sauce and topped with crab.
- Grand Pacific Filet
Grilled beef fillet bathed in Cai-cai sauce (shrimp tails, corn, ham, mushrooms, bacon and white sauce).
- Sweet and sour pork loin
Grilled pork tenderloin, topped with applesauce and pears in palm syrup.
